Recipe: Watermelon Slushie

What do you do when you have a glut of watermelon? Freeze it and make watermelon slushie! I started doing this last summer and it's the perfect way to use up a watermelon, especially one that's a bit overripe. Plus, with a touch of lime and mint it really hits the spot on a hot day!

The measurements given are just a guideline - I don't usually measure, just use what I have or fill up the blender. My blender is nothing fancy, so I do need to include some fruit that is not frozen so that it will blend. Depending on what I have on hand, I'll use half fresh and half frozen watermelon, or if it's all been frozen, I'll take it out of the freezer and let it sit for 20-30 minutes until it's only semi-frozen and blends easily.

I sometimes add a dash of maple syrup, but it really depends on how ripe and sweet the watermelon is, so I recommend tasting it first and adding it at the end if you wish.

Ingredients

  • 2 cups frozen watermelon chunks
  • 2 cups fresh watermelon chunks
  • Juice of 1 lime (2-3 Tbsp)
  • Handful of fresh mint leaves
  • Dash of maple syrup (optional)

Directions:

  1. Place the watermelon, lime juice and mint leaves in a blender and blend until smooth, adding a small amount of water if needed to get things moving
  2. Taste and add maple syrup if needed.
  3. Enjoy your slushie!

Makes 2 large or 4 small glasses
